Since the start of the new millennium, the company has carried
out various improvements to its cantina. Thanks in part to funds
provided by the Regional Development Plan, the buildings and equipment
have been modernized while maintaining a distinctly traditional
set up.
Alongside the tried-and-trusted vats in vitrified cement, there
now stand stainless steel, thermo-conditioned vats: essential
equipment for the modern vinification methods of both white and
red varieties.
In an old farm building, an existing barrique room has been fitted
with an air-conditioning system while in a room above the office
a dedicated space has been created in which to hang the late autumn
grapes destined to become Vinsanto.
An underground tunnel has been repurposed to create a cellar
for the best bottles produced by the company - a "hall of
fame" of our wines. Plans are underway for the creation of
a wine-tasting room in a nearby farm building.
